The members of the Association of Black Forest Ham Manufacturers (Schutzverband der Schwarzwälder Schinkenhersteller) guarantee the quality of their hams by means of a strict quality management of the companies in the Association as well as through continuous checks and controls by the Regional Council in Karlsruhe. Schwarzwälder Schinken (Black Forest Ham) from member companies can be recognised by the seal of approval of the Association.
Schwarzwälder Schinken (Black Forest Ham) has been among the premium European hams enjoying EU protection of geographical indication since 1997. This is ensured
by statutory provisions and EU Directive 510 / 2006, which stipulate the
quality parameters and the manufacturing process in detail. Thus only pigs
whose breed, fodder and age meet specifications may be used for Schwarzwälder Schinken (Black Forest Ham). Finally, the 50-day dry curing at 5° C, the two-week smoking over softwoods at 25° C, and the ageing process lasting several weeks, in which climatic factors in the region play a significant role, all have to take place in the Black Forest.
