Black Forest Ham
Black Forest Ham is a raw, smoked, boneless ham with or without a topside. It is characterised by its compact red meat with fat (approximately 1/5) and its typical smoked aroma, which it traditionally receives by smoking over fir branches in the Black Forest. Additional features include its proper cut and its thorough curing.
If stored correctly, Black Forest Ham keeps for months. Entire hams or larger pieces should be hung up in a cool, dry room – best of all in a linen bag (otherwise it also keeps in sealed vacuum packages). The parts of the ham which are exposed after it is cut should be covered with parchment paper.
Slice for slice: pleasure pure
There are foods which are unmistakable as a result of their typical taste. Or their characteristic appearance. Or their unique origin. Schwarzwälder Schinken (Black Forest Ham) easily meets all three challenges – because this ham from the Black Forest is inimitable: pleasure pure.
Fir branches and sawdust from the Black Forest lend it its excellent taste and intensive red colour. The typical blackish-brown rind comes about through the traditional smoking procedure. And as for its origins, it has the very best references. This is demonstrated not least by the commendation awarded to Black Forest Ham by the EU: "PGI" stands for Protected Geographical Indication and is a protection-of-origin label which only very few ham specialities have been allowed to bear so far.
There has been lots of talk about “back to the roots”, about light regional cuisines and quality-conscious nutrition. Schwarzwälder Schinken (Black Forest Ham), also stands for this. The raw ham is produced according to traditional techniques, which is perhaps why it fits in so well with the “tastes of our times”. And raw ham also plays an important role in the growing importance of premium-quality food which is nutritional and healthy. It offers enjoyment pleasure without a bad conscience, and the arguments for it are convincing: little salt (lightly cured), little fat (a low percentage of fat), lots of B vitamins (B1, B2, B6 and B12) and lots of minerals and high-quality protein. Good taste and the right “deliciousness” cannot be forced into any nutritional formula. But they can be tasted and enjoyed – just like with Schwarzwälder Schinken (Black Forest Ham).
